The new menu is a spirited journey through Italy’s rich and varied landscapes, crafted for guests to experience La Gioia di Vivere – the “joy of living”, where simple everyday moments transform into celebration, snapshots of a travel diary filtered through a Singaporean lens.  Thoughtfully divided into two distinct sections, Mementos invites guests to ease into Aperitivo Hour with a curated selection of low-proof and non-alcoholic drinks, while Escapades is a spirited collection of 7 cocktails, each a vibrant tribute to Italy’s iconic regions and flavours.  

Allora’s Mementos collection invites guests to ease into the day or evening with light, low-proof and non-alcoholic creations that are layered, whimsical, and crafted with intention. 

Take Bellissima, a tropical amaro sour that captures sunshine in a glass - topped with a delicate bubble. Amaro Lucano lends its bittersweet herbal complexity, gently softened by pink rum aged in rosé wine barrels. A vibrant passionfruit and basil syrup bridges Italy’s regions, while a grapefruit-rosemary tonic adds botanical lift. Smile, Lo Sgroppino reimagines the Venetian palate cleanser with pear-infused gin, lemon sorbet, prosecco, and a hint of Vin Santo. The result is a slushy-textured, floral-fresh cocktail with a fruit-forward elegance that cleanses and charms. Palazzo channels the warmth of Sicily’s festive cucidata cookies through a spiced, citrusy highball. Rinomato Aperitivo and Mancino Bianco Vermouth pair with a fig and longan shrub, black lemon bitters, and white peach jasmine soda - a bittersweet and aromatic nod to Italy’s opulent traditions. 

Also in the mix is the Spritz of Sorrento, a sparkling coastal refresher where Luxardo Limoncello meets yellow bell pepper, herb-infused honey, and prosecco - tart, citrusy, and evocative of Mediterranean groves. Amber & Vine celebrates Emilia-Romagna’s stone fruit and vinegar traditions, blending dried apricot–infused gin, artichoke-based Cynar, and white grape vinegar for a tart, herbaceous finish. 

For those seeking zero-proof pleasure, Figs of Mezzogiorno is a mellow, spiced spritz with fig shrub, herb honey, lemon, and 0% cider — a warm tribute to southern Italy. Meanwhile, Via Frutta offers a sparkling medley of orchard fruits, jasmine green tea, lemon, and 0% beer, with optional cinnamon gula melaka syrup for comforting depth. These non-alcoholic serves are as thoughtful as their spirited counterparts, each capturing the essence of a moment worth savouring. 

Allora’s Escapades collection is a bold celebration of stories in a glass — where regional ingredients, culinary flair, and creative technique converge in expressive, unexpected cocktails. 

The Martini al Pomodoro is a garden-fresh ode to Southern Italy’s prized tomato, reimagined as a 50/50 martini. A duo of Citadelle gins - one classic, the other pickle-infused - lay the botanical groundwork, while Mancino Secco Vermouth adds herbal complexity. At its heart lies Allora’s signature tomato sauce, transformed into a silky, chilled martini with vegetal depth and savoury elegance - a perfect pairing with the restaurant’s dishes. 

From the north, Caffè di Treviso pays homage to the birthplace of tiramisu, inspired by Allora’s own signature Alloramisu. Tried & True Vodka, Mancino Kopi Vermouth, Monin Tiramisu and a touch of Guinness stout create a cocktail that’s layered, bittersweet, and velvety. Topped with fresh mascarpone foam, Biscoff crumble, and dark chocolate, this is a dessert in a glass, indulgent yet balanced. 

Taking brunch by storm, Sunday in Positano fuses Singapore’s chilli crab with Italian flair. Guests choose their own spirit - vodka, gin, or tequila - to anchor a spicy, umami-rich mix of chilli crab paste, salted egg chip garnish, chef’s tomato sauce, and pineapple juice. Rolled with cucumber and strained for texture, it’s a daring twist on the Bloody Mary that’s bold, tangy, and unmistakably local. 

Other adventures await: Oro di Arancia glows with clarified orange, coffee, coconut, and spice — a radiant, creamy punch with tropical warmth. Bologna After Dark ventures into the savoury, with bourbon and rum fat-washed with mortadella and salami, deepened by Amaro Lucano and gula melaka syrup in a decadent, bittersweet old-fashioned. The Venetian Sling sails the Grand Canal with a red fruit and passionfruit blend, brought to life by Venetian gin and Mancino Rosso — a modern twist on the Singapore classic. Rounding off the collection, Paradiso Toscano is a Tuscan sangria reimagined with Southeast Asian flair. Chianti’s earthy cherry notes are brightened with mango and kiwi purée, spiced with ginger, and gently smoked with cinnamon - a comforting, fruity escape best enjoyed under the sun. 

The menu, inspired by travel ephemera and the thrill of discovery, will be launched with “The Full Flight” experience – a tasting selection of 3 full-sized cocktails for the price of 2. Mix and match cocktails of your choice from both collections with an optional add-on pairing menu, curated in collaboration with our culinary and bar team. This promotional offer will be available as a limited time special – till 30 September 2025 and comes with a special collectable enammel pin and postcard for you to bring home.  

Whether sipped under the open sky in the alfresco garden or paired with a leisurely meal, Allora’s new cocktail menu encourages exploration through the taste and flavours of Italy.
