This July, Allora is delighted to welcome Chef Do Van Quy, Chef de Cuisine at 3 Spoons, InterContinental Hanoi Landmark72, for an exclusive culinary collaboration from 5 to 13 July. Known for his ability to bring a fresh perspective to traditional Vietnamese cuisine, Chef Quy will be presenting a limited-time set menu available daily for lunch and dinner, and a lavish Vietnamese buffet brunch on 13 July only.
Chef Quy hails from Vietnam and has built a distinguished culinary career that spans luxury hotels across the Middle East. These international experiences have shaped his unique cooking style—one that respects the deep-rooted traditions of Vietnamese cuisine while embracing global influences. At 3 Spoons, he has earned acclaim for transforming humble, familiar dishes into sophisticated creations by fusing authentic flavours with modern presentation and inventive techniques. His food tells a story: from the bustling streets of Hanoi to the refined kitchens of five-star hotels, each dish reflects the journey, culture, and passion behind it.
Diners at Allora can look forward to a four-course set menu priced at $50++, thoughtfully crafted to highlight some of Chef Quy’s most beloved flavours. The experience begins with an amuse bouche—a chef’s choice pizza with a Vietnamese twist—followed by a delightful duo of spring rolls: one fresh with tiger prawns and another deep-fried with crab. For the main course, guests may choose between Cơm Tấm, a classic dish of BBQ pork with broken rice, egg loaf, pickles and pineapple sauce, or the comforting richness of Wagyu Beef Phở served with rice noodles and aromatic beef broth. To finish, the dessert offers a sweet nod to tradition with Bánh Trôi—sticky rice dumplings filled with taro, dressed in ginger-infused sugarcane syrup and sesame seeds.
On 13 July, the celebration of Vietnamese cuisine culminates in a vibrant buffet brunch, where guests will enjoy a showcase of Chef Quy’s signature dishes alongside a curated selection of Allora’s buffet favourites. The brunch will feature live stations offering Vietnamese street food classics such as bánh mì, spring rolls, phở, bún chả, bánh xèo, and an extensive BBQ spread including nem lụi, chả cá lã vọng, satay squid, oysters with scallions, and bò nướng lá lố - beef wrapped in betel leaf. A colourful array of starters and main courses, from lobster banana blossom salad and tiger prawns in tamarind sauce to braised pork belly and Hanoi fried rice, will also be on offer. Desserts include traditional favourites like grilled banana with sticky rice and lotus seed with longan sweet soup, promising a sweet ending to a flavour-packed feast.
