This September, Allora Ristorante & Bar at Crowne Plaza Changi Airport will collaborate with voco Bangkok Surawong to present A Taste of Thailand, a one-day-only Thai and Italian buffet on Sunday, 9 November 2025, from 12.00pm to 3.00pm. 

This collaboration brings Chef Rattakant Charasphattanaraks (Chef Cho) from voco Bangkok Surawong to our shores, showcasing his passion for preserving and sharing the rich culinary heritage of Thailand. With his deep knowledge of traditional Thai cuisine and his flair for balancing vibrant flavours with modern finesse, Chef Cho presents a menu that captures the heart of Thailand, where food is a celebration of culture, family, and community.

Thai cuisine is a harmony of the senses, weaving together spicy, sour, salty, and sweet into dishes that tell a story of the land and its people. Guests can look forward to indulging in specialities such as Steamed Sea Bass with Spicy Lime Sauce, fragrant with garlic and coriander, Roasted Duck in Red Curry, and Steamed Seafood Curry in Young Coconut. Classics like Wok-Fried Chicken with Cashew Nuts, Deep-Fried Fish Cake, and a refreshing Thai Herbs Salad with Salmon bring beloved flavours to the table.

The buffet will also feature an exciting line-up of live stations. Watch as chefs prepare Pad Thai with Prawns, wok-tossed to perfection, or savour endless bowls of Thai Boat Noodles in a rich, spiced broth simmered with star anise and cinnamon. From the grill, enjoy Pla Meuk Yang, marinated squid with seafood sauce, Kung Pao, grilled prawns with spicy lime sauce, and the hearty Khao Ka Moo, a Thai-style braised pork leg carved to order and paired with fragrant Thai rice and condiments.

To complete the journey, an array of Thai desserts awaits. From the iconic Mango Sticky Rice and Banana Prata drizzled with condensed milk, to delicate sweets like Butterfly Pea Panna Cotta, Pandan Coconut Crème Brûlée, and Tub Tim Krob – every dessert is a perfect balance of comfort and indulgence.

In addition to the Thai feast, Allora will continue to present its signature Italian favourites. Guests can delight in our one-metre pizza, creamy Cheese Wheel Pasta, artisan cold cuts, and fresh seafood on ice, including prawns, scallops, lobster, and oysters. To end on a sweet note, Italian desserts such as tiramisu and panna cotta will be served alongside the Thai creations for a true cross-cultural dining experience.

This fourth instalment of Allora's series of collaborations promises a culinary celebration that unites the fiery vibrance of Thai cuisine with the timeless elegance of Italian gastronomy – an experience not to be missed at Allora.
