This September, Allora Ristorante & Bar at Crowne Plaza Changi Airport will collaborate with InterContinental Bali Resort to present Bali on a Plate: A Journey of Taste, Spirit and Tradition, a one-day-only buffet on Saturday, 28 September 2025, from 12.00pm to 3.00pm. 

This collaboration brings Sous Chef Made Yaskan - a Denpasar native whose lifelong passion lies in preserving the rich, authentic flavours of Indonesian and Balinese cuisine - to our shores. Having been with InterContinental Bali Resort since 1999, Chef Yaskan draws upon more than two decades of culinary experience to bring the soul of Bali to Singapore with a menu that reflects the island’s vibrant traditions and rich philosophy of Tri Hita Karana - the harmony between the divine, humanity and nature. 

Balinese food is a living expression of culture, spirituality, and community. Each dish is rooted in tradition and symbolism, from the ceremonial Nasi Kuning to the bold, spice-laden meats that pay homage to Bali’s heritage of communal feasting. Guests can look forward to savouring specialities such as Be Sampi Menyatnyat, a traditional braised beef dish, Udang Metunu Khas Jimbaran – signature Jimbaran-style grilled prawns over coconut husk charcoal and Tum Siap, a Balinese delicacy of steamed minced chicken wrapped in banana leaves.  

Fresh from the grill, the carving station presents Babi Guling, the famed Balinese-style roast suckling pig infused with fragrant turmeric and lemongrass spice paste, Ayam Betutu Gilimanuk, a slow-roasted spiced chicken prepared with authentic Gilimanuk seasoning and Whole Grilled Snapper with sambal Dabu-dabu, a refreshing salsa-like condiment. 

The buffet will also feature a variety of live stations, from a barbecue with Sate Languan and Sate Babi, a hawker-style Ayam Penyet counter to a Balinese noodle stall with Bakso and Soto Ayam noodle stall, alongside hearty dishes such as Kuah Be Pasih Misi Timun, a lightly spiced fish broth with cucumber, Jepang Meroroban, stewed chayote with long beans and aromatic spices, Tuna Sambal Matah, seared tuna served with raw lemongrass-chili relish and garden salad and Ayam Sisit Sere Lemo - shredded chicken tossed with kaffir lime leaf and fragrant blend of red pepper coulis. 

To complete the journey, traditional desserts including Pisang Rai, steamed bananas coated in coconut, and Bubur Injin, a comforting black glutinous rice pudding with coconut milk, will be served. 

In addition to the Balinese feast, Allora will present its own Italian favourites, signature one-metre pizza, a Cheese Wheel Pasta Station and a spread of Italian cold cuts and artisan cheeses. The signature Seafood-on-ice will also offer fresh Prawns, Mud Crabs, Scallops, Mussels, Lobster and Oysters. To end on a sweet note, an array of desserts awaits, including Milomisu, Ondeh Ondeh Cake, Soymilk Panna Cotta, and Nonya kueh, alongside many other indulgent creations.
